Savory Tomato Pie

There are sweet pies and then there are savory kinds. And this savory tomato pie recipe is best served with all types of grilled lean meats and a garden salad − making it a balanced meal.

Ingredients

  • 1 pre-made pie crust
  • 2 cups sliced tomatoes, remove excess water by placing on paper towel and salt
  • ½ cup green onions, sliced
  • Fresh basil, thyme or rosemary
  • 1 cup reduced fat mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated

Directions
Place pie crust on baking stone or cookie sheet.

Layer sliced tomatoes on top of the pie crust leaving about an inch of the edge open. With each layer season the tomatoes with fresh herbs of your choosing and green onions.

Place the mozzarella on top of the tomatoes and then sprinkle the Parmesan on top.  Fold the edges of the crust over the edge of the tomatoes.  Bake in 350°-degree oven until crust is golden brown and the cheese is melted and slightly golden.  Remove from oven and let sit for 15 to 20 minutes before cutting.
