Ingredients
1 cup chopped purple onion
1 ½ cups crushed fresh tomatoes
12 corn tortillas cut into wedges
6 ounces low-fat cheddar cheese
1 ½ cups low-fat cottage cheese
1 teaspoon cumin
¼ teaspoon garlic powder
2 teaspoon chili powder
1 tablespoon vegetable oil
1 avocado sliced (optional)
½ purple onion sliced into rings (optional)
Directions
- Blend tomatoes with low-fat cottage cheese in blender until smooth.
- Sauté onion in oil for about 5 minutes.
- Add tortilla wedges, garlic powder, chili powder, and cumin and mix until tortillas become soft.
- Slowly pour mixture of tomatoes and cottage cheese into pan with the tortilla wedges.
- Transfer mixture into a casserole dish and sprinkle with low-fat cheddar cheese.
- Bake at 350°F for approximately 20 minutes.
