Ingredients

1 cup chopped purple onion

1 ½ cups crushed fresh tomatoes

12 corn tortillas cut into wedges

6 ounces low-fat cheddar cheese

1 ½ cups low-fat cottage cheese

1 teaspoon cumin

¼ teaspoon garlic powder

2 teaspoon chili powder

1 tablespoon vegetable oil

1 avocado sliced (optional)

½ purple onion sliced into rings (optional)

 

Directions

  1. Blend tomatoes with low-fat cottage cheese in blender until smooth.
  2. Sauté onion in oil for about 5 minutes.
  3. Add tortilla wedges, garlic powder, chili powder, and cumin and mix until tortillas become soft.
  4. Slowly pour mixture of tomatoes and cottage cheese into pan with the tortilla wedges.
  5. Transfer mixture into a casserole dish and sprinkle with low-fat cheddar cheese.
  6. Bake at 350°F for approximately 20 minutes.
  7. Optional: Garnish with slices of avocado and/or purple onion.
