Japanese Zucchini and Onion

Caramelized onions cooked into fresh sliced zucchini seasoned with soy sauce, teriyaki and sesame seeds.

Ingredients

  • 2 tbsp vegetable oil
  • 1 medium onion, thinly sliced
  • 2 medium zucchini cut into thin strips
  • 1 tbsp low sodium soy sauce
  • 2 tbsp teriyaki sauce
  • 1 tbsp sesame seeds
  • Ground black pepper to taste

 

Directions
In a large skillet, warm the oil over medium heat. Stir in onions and cook 5 minutes or until they start to become translucent. Add in zucchini and continue to cook over medium heat, stirring every minute. Stir in teriyaki sauce, soy sauce, and sesame seeds. Cook until zucchini is fork-tender. Stir in black pepper and serve hot.
