Cucumber Salad with Soy Ginger and Garlic

Ingredients

2 large cucumbers (thinly sliced)

3 tablespoons seasoned rice vinegar

1 tablespoon soy sauce

1 teaspoon sugar

1 small garlic clove (minced)

1 teaspoon minced fresh ginger

1/8 teaspoon ground cayenne (to taste)

Freshly ground pepper

2 tablespoons sunflower oil or grapeseed oil

1 bunch scallions, white and light green parts (thinly sliced)

2 tablespoons chopped cilantro

 

Instructions

  • Add cucumbers to colander in the sink. Let sit for 15 minutes then rinse and pat dry. Transfer to a salad bowl.
  • In a separate container add the vinegar, soy sauce, sugar, garlic, ginger, cayenne, pepper, sesame oil, and the sunflower oil and whisk together.
  • Add the scallions and cilantro to the cucumbers. then add the mixed sauce and toss together.
  • Place until it is time to serve.
