Mujadara Recipe

As we mark Arab American Heritage month, let’s celebrate with this delicious and soul-satisfying Mujadara recipe. An iconic Middle Eastern recipe, Mujadara blends simple ingredients to create a flavorful and comforting meal that is perfect for any occasion. This traditional dish combines earthy lentils, aromatic spices, rice, and caramelized onions for a burst of flavor in each bite.

This easy to make, hearty, vegetarian yet protein-packed recipe is sure to delight your taste buds and impress your guests.

Ingredients:

1 tbsp ground cumin

1 tsp ground coriander

½ cup finely chopped fresh cilantro

2 lbs yellow onion, thinly sliced

½ tsp ground black pepper

¼ tsp cayenne pepper

½ tsp ground cinnamon

3 cloves garlic, chopped

juice of 1/2 lemon

2-3 tbsp extra-virgin olive oil

1 cup brown basmati rice, rinsed and drained well

1 cup dried green or brown lentils, rinsed and drained well

3 cups vegetable broth

2 cups water

½ tsp salt, salt to taste

Instructions:

  1. Set the stove to medium-low, heat the olive oil in a sauté pan with a fitting lid.
  2. Add the onions and garlic. Sprinkle with salt. stir every few minutes for about 30 minutes, until the onions are golden and caramelized.
  3. Remove about half of the caramelized onions from the pan and store in a bowl to use for garnishing.
  4. Add the rice and lentils to the pan with the onions and stir.
  5. Pour in the vegetable stock, water, and spices. Stir and bring to a boil, then lower the heat.
  6. Cover the pan and let simmer slowly for about 45 minutes until the rice and lentils are fully cooked and the liquid is absorbed.
  7. Remove the pan and let sit for 5 minutes.
  8. Stir in the chopped cilantro and lemon juice. Taste and adjust seasoning as needed.
  9. Serve immediately, topped with some of the reserved caramelized onions and additional lemon and cilantro.
