An iconic Middle Eastern recipe, Mujadara blends simple ingredients to create a flavorful and comforting meal that is perfect for any occasion. This traditional dish combines earthy lentils, aromatic spices, rice, and caramelized onions for a burst of flavor in each bite.
This easy to make, hearty, vegetarian yet protein-packed recipe is sure to delight your taste buds and impress your guests.
Ingredients:
1 tbsp ground cumin
1 tsp ground coriander
½ cup finely chopped fresh cilantro
2 lbs yellow onion, thinly sliced
½ tsp ground black pepper
¼ tsp cayenne pepper
½ tsp ground cinnamon
3 cloves garlic, chopped
juice of 1/2 lemon
2-3 tbsp extra-virgin olive oil
1 cup brown basmati rice, rinsed and drained well
1 cup dried green or brown lentils, rinsed and drained well
3 cups vegetable broth
2 cups water
½ tsp salt, salt to taste
Instructions:
- Set the stove to medium-low, heat the olive oil in a sauté pan with a fitting lid.
- Add the onions and garlic. Sprinkle with salt. stir every few minutes for about 30 minutes, until the onions are golden and caramelized.
- Remove about half of the caramelized onions from the pan and store in a bowl to use for garnishing.
- Add the rice and lentils to the pan with the onions and stir.
- Pour in the vegetable stock, water, and spices. Stir and bring to a boil, then lower the heat.
- Cover the pan and let simmer slowly for about 45 minutes until the rice and lentils are fully cooked and the liquid is absorbed.
- Remove the pan and let sit for 5 minutes.
- Stir in the chopped cilantro and lemon juice. Taste and adjust seasoning as needed.
- Serve immediately, topped with some of the reserved caramelized onions and additional lemon and cilantro.
